Title: Any interesting recipes for canning beans or corn?
Post by: NJLiberty on June 05, 2008, 06:11 PM NHFT
I planted a lot of green beans and yellow wax beans this year, as well as two varieties of sweet corn. Does anyone have anything interesting to do with them as far as canning goes? Typically I just freeze or can most of them and put up some as pickled beans. This year I am looking to do something different with some of them. Any help would be appreciated.

Thanks,

George

No canning help, but pickling them is good :)  I picked some with hot peppers and lots of garlic and it turned out yummy.

I pickle some that way for myself, and some without the heat for my wife and daughter. They are real light weights when it comes to heat.

Yeah! 3-bean salad! Green beans, wax beans and kidney beans - pickled! Add garbanzo beans (chick peas) for a 4-bean salad!
