I think that's one of the keys to disarming them and gaining some control over the situation. Meeting force with force, or bad attitude with worse attitude, or paranoia with fear, just throws more fuel on the fire and gives the aggressor more strength.

To put it in the language of a phrase that is currently in vogue, Bill broke their OODA loop. In plainer terms, instead of responding as they expected, he made them pause in a "WTF?" moment, and during that pause he took control by being unexpectedly polite and cooperative. And not in a sarcastic way, either (for the most part). It's important that his being "cooperative" was an attitude, not what he actually did. Because he didn't give in, he just redirected with a smile.
