Where do I find a butcher?

Yes, it's much more expensive, for a couple or reasons. First, it takes more time, and ties up the cooler for sides that could be rushed through and ground into hamburger. Second, the meat "shrinks" during aging, weight-wise; the same shrink that concentrates the flavor also reduces the poundage available for sale.
Dry.  If you don't have to shave bits off your aged beef you didn't do it right.

A couple of the cooking shows I watch suggest dry aging rib roasts in your fridge for a week or so.

Russell found that they feed dried manure back to the cows during his tour of KS.  We saw the same thing over in Westmoreland.  Yum yum, bet it makes the beef taste special.

I was at a farm in Concord last week and I saw the farmer spreading dried manure to his veggies..... bet it makes those tomatoes taste special. ;)

And this is why I don't eat Kansas City steaks. They taste like crap. :)

I know this is after the fact, but there is Mike's Red Barn in Salem and I believe there is a butcher shop in Bedford, too. Sully's in Goffstown has good meat.

went to Bull Run before going to P-fest.  Got some nice Strip Steaks, though they made the mistake of labeling them NY strip steaks as opposed to KC strip steaks. 
;)

Damn Yawkers stealing our food and naming it something different.

I was not happy with the selection of rubs/marinades etc... but the "steak seasoning" that I got was pretty good.  The steaks came out delicious and bloody.  Gotta love that e.coli or whatever...

The checkers at A-Market in Manchester also seemed to laugh worriedly when I mentioned Whole Foods.

After I read that Whole Foods founder and CEO, John Mackey, is a libertarian, and in the same article he was quoted as saying something like: Nobody shops at Whole Foods to put money into John Mackey's pocket, I always tell the checkers at Whole Foods that I do, in fact, shop there to put money into John Mackey's pocket. ;D
