Qik - Streaming video in the event your phone is seized
Rehearsal Assistant/Voice Recorder - Hands-free audio recording. Good for pull-overs and courts when security demands you give up your phone.
APG - Android apps for PGP/GPG Encryption
Astro File Manager - Easy file management and intuative file-sharing via Bluetooth

General improvements, not activist specific:
Meridian Media Player. I like it a lot better than the default one.
Dolphin Browser - Seems faster, more computer like and supports tabs
