Where do I find a butcher?

There's usually a butcher inside a butcher shop.

There's at least 2 butcher shops near my place in Hudson.  Lots more than where I lived in MA.

Are there any NH butchers who age beef?

If you've never had a steak sliced off a side of beef that has hung in the cooler for 2-3 weeks, you're missing out.

Some Whole Foods sell aged beef.  I believe it's sold under the "if you have to ask . . ." pricing program.

This one is my favorite butcher movie.

I watched Motel Hell before that was so funny.    By the way KB, how in the world did you get the big picture of it copied onto your post?

I had such a hard time getting my little picture on here.  I tried to select it by pressing select all on the edit button and then I pressed copy and when I went to paste it on the post nothing happened so I had to use the attachment option.

Yes, it's much more expensive, for a couple or reasons. First, it takes more time, and ties up the cooler for sides that could be rushed through and ground into hamburger. Second, the meat "shrinks" during aging, weight-wise; the same shrink that concentrates the flavor also reduces the poundage available for sale.
